Step by step

Method

    The tomatoes should be washed properly. It is worth noting that I take small oblong tomatoes for adjika - they are fleshy, tasty and great for making tomato puree.

    Grind tomatoes in a blender or pass through a meat grinder.

    Put the mashed tomato in a pan and put on a medium fire. When the fire starts to burn, it will be a fire. Cook the tomatoes for about 15 minutes until most of the liquid has evaporated.

    In the meantime, we will prepare the second batch of ingredients. Sweet peppers wash, cleanse from seeds and cut into several slices. From hot red pepper, extract the seeds and cut into thin rings.

    Grind in a blender alternately, first hot red pepper, and then sweet pepper.

    Add sweet and hot peppers to the pan to the tomatoes, stir and continue cooking for 10 minutes.

    Garlic is the main ingredient of homemade adjika. We will need 1.5-2 heads depending on your preferences.

    Squeeze the peeled garlic through the press into the pan. Add salt and sugar. How to mix and continue cooking for another 5 minutes. (Taste ajika to taste, if not enough salt, add more)

    Put the finished adjika in sterilized banks and twist. Wait until the banks cool down and put them in the refrigerator. Serve acute adjika to any dishes: side dishes, meat, etc.
