Step by step

Method

  1. 01

    Augolemono is Greek soup. It is prepared with rice or with small Orzo pasta. The soup is very delicate with a creamy structure.

    Prepare chicken broth and all the necessary ingredients for making soup.

    Cut the onions finely.

  4. 04

    In a pot with a thick bottom pour olive oil and roast it in the onion until translucent.

    In the roasted onions add chicken broth and bring everything to a boil. Cut the chicken breasts into small pieces.

    Throw the meat in the boiling broth.

    Rice well washed and put in the soup. Cook for 15-20 minutes. Fix it to your taste. Pour into a large cup (0.5 liters) of soup broth and leave it to cool. Squeeze the juice out of the lemon.

    Beat the eggs in a deep bowl or in a small pan. Without stopping the whipping, add lemon juice.

    Continuing whipping, in 2-3 receptions, enter hot broth into the egg-lemon mixture.

    Pour this mixture into the soup and mix without stopping until a slight thickening.

    The soup must not boil! Put the soup off the fire.

    Sprinkle with chopped greens, decorate with lemon and serve immediately.
