Mix yeast, warm water and sugar in a large bowl. Leave for 5-10 minutes. Then add olive oil, salt and about half the flour to the yeast mixture. Gradually add the remaining flour. Rinse the dough until it is uniform and elastic. Remove the dough in a warm place and cover with a wet cloth. Give rise within 1 hour or until the dough does not increase in volume twice.

Roll the dough into a layer about 5 mm thick. Sprinkle the surface with Provencal herbs.

Grate the cheese on the grate.

Evenly distribute the cheese on the dough and cut with a knife into even rectangles.

Turn the rectangles into roulettes. We take any comfortable form for baking. I used a 27 cm diameter shape. Lubricate the shape with oil and lay the roulettes. Don't stack them too tight.
