Step by step

Method

    Chihirtma is a very interesting soup of Georgian cuisine for amateurs. This soup is prepared on a broth of poultry or lamb meat, while it is thickened with cornmeal. And its main feature is the lack of thickness.

    Prepare chicken, eggs, flour, lemon, onions, vegetable oil, salt, pepper, greens dry and/or fresh greens

    Make the chicken into pieces and cook the usual broth with pepper and dry greens.

    Onions are pinned and roasted in vegetable oil.

    Dry the flour in a hot pan, don't fry!

    Add to the flour a scoop of broth and stir in a homogeneous mass.

    Beat the eggs with the juice of half a lemon.

    From chicken broth, remove the chicken pieces and separate the meat from the bones. In the broth, add first the onion, then the flour mass, and then the egg mixture. Stir it up.

    Bring to a boil when stirring and remove from the fire.

    In portion plates, put pieces of chicken, pour the broth, add chopped greens and a slice of lemon. Chihirtma and chicken are ready.
