- 01
Fish is a delicious and healthy dish. Today I will be cooking bald fish from pelengas. It turns out a wonderful bay, which will look good on any festive table.
- 02
Prepare the necessary products for the brewing from fish.
- 03
Peel the fish. Cut the fins. Cut off your head. Eviscerate. Wash it well. Cut the carcass along, cut the ridge.
- 04
Filet in pieces.
- 05
Remove the eyes and gills from the fish head.
- 06
Pour your head and ridge with water. Put the peeled carrots, parsnips and onions. Bring it to a boil. Remove the foam and cook over a slow heat for 1.5 hours. Get your head and ridge out of the broth.
- 07
Throw fish pieces into the broth and cook for another 15-20 minutes. 5 minutes before the end of cooking, salt the broth, throw bay leaf, black and fragrant pepper.
- 08
Take out the fish and leave it to cool. Strain the broth and leave to cool to about 60 degrees.
- 09
Pour some broth into a separate bowl. Dissolve the gelatin in the broth.
- 10
Pour the gelatin solution into a pan of broth. Stir it well.
- 11
Put the pieces of fish on plates.
- 12
Pour the fish pieces with broth. Put the plates in the refrigerator to freeze for about 2 hours.
- 13
Prepare the jewelry. You can decorate the gully with slices of lemon, figuratively carved pieces of carrots or turn the gully into a “swan lake”.
- 14
Make a reed out of the stems of dill. You're gonna need some quiz. Just mix some flour with water. Stick the pieces of dough on the stems of dill. Soak the dough with water and roll the "reed" in a hammer of coffee.
- 15
Boil 2 hard-boiled eggs. Cool off. Clean it up. Cut out one egg of the neck and wings of the swan. The second egg will serve as the body. Cut a piece in the narrow part of the egg so that the swan stands steadily. Make a tail out of the cut part. From a piece of carrot that was boiled in broth, cut out the beak. Make the eyes of the swan from a small pepper pea.
- 16
Fix the swan neck with the torso and beak with toothpicks. Put the wings in the incisions on the torso. Make thickets from the tips of green onions placed on toothpicks. Cut a little dill to make an "island." Cut the lily out of the small bulb.
- 17
Decorate the bay from the fish.
Ready to serve
Serve the dish as directed and enjoy it while it is at its best.
Bon appétit — enjoy your meal!Source & licence
