- 01
Lulya-kebab refers to the dishes of Caucasian cuisine, it is prepared, as a rule, from lamb. The dish has a self-sufficient taste, almost does not require a side dish, except for greens, sauce and pomegranate grains.
- 02
Wash the lamb and cut it finely.
- 03
Add pepper, some salt, spices and finely chopped onions.
- 04
Thoroughly mix and remove for 2 hours (minimum) in a cool place, so that the meat is marinated and soaked with spices. This is a very important point. If this is not done, the taste of lyula-kebab will be different, you will get ordinary cutlets.
- 05
When the meat is sufficiently marinated, make minced from it. All contents scroll through the meat grinder. To taste, you can additionally add salt and pepper. The finished mince must be well beaten within 10 minutes. To do this, grab a portion of minced meat with your hand and throw it into a bowl or on a table with effort. Do this until you feel the meat is viscous.
- 06
From the farce to form sausage cutlets, elongated shape, strung them on wooden swords and put to grill, or pan. For frying, it is better to use a mixture of butter and vegetable oils. Roast on both sides for 10-15 minutes.
- 07
Ready lyula-kebabs garnish with greens, onions, lemon, pomegranate grains.
Ready to serve
Serve the dish as directed and enjoy it while it is at its best.
Bon appétit — enjoy your meal!Source & licence
