    The cake "Norka mole", or as it is also called "Mole", is very loved in our family. It is a delicate soufflé with pieces of chocolate and a banana flavor, in chocolate biscuit. I want to share with you the way it is prepared.

    So, to make a cake of the mink mole, we're going to need these simple ingredients.

    We're making biscuits.

    Separate the proteins from the yolks. We do this carefully so that not a drop of yolk gets into the proteins. The sugar can be split in half, part will go for proteins and the other part for yolks.

    Proteins are whipped into a strong foam with sugar - so that when the bowl is turned over, the proteins do not move from place. Yellows are whipped also with sugar and with an infusion of a thin stream of hot water. We combine proteins with yolks, very carefully, only slightly stirring.

    In a separate container, mix flour, cocoa and baking powder. Add to the whipped mass and stir the corolla until homogeneous. Try to keep all the splendor.

    We pour the dough into a round shape, covered with baking paper (I used a shape with a diameter of 26 centimeters).

    Bake biscuit for 30 minutes at a temperature of 180 degrees. The biscuit should look like the photo.

    Let the biscuit cool for a couple of hours. Next, take our biscuit and retreat from the edge of 2 centimeters, cut a circle and extract the middle.

    Soaking up the biscuits. To do this, mix a sweet water with a spoonful of cognac. Then we put in the depression cut along the bananas. In the photo, the bananas seem to be whole.

    Let's make cake cream. Banana pureed blender and mixed with cottage cheese and sugar. Gelatin will pour water. We're gonna whip the cream into a thick foam.

    Gelatin, previously poured with water and already swollen, melt in a water bath so that all the grains dissolve. You can’t boil it, otherwise it won’t freeze.

    When combining gelatin and banana curd mass, they should be the same temperature, i.e. gelatin should cool to room temperature, and cottage cheese with banana puree should be heated to room temperature. In a container with cooled gelatin, add one spoonful of cottage cheese and banana mass and stir well. And only then we combine all this gelatin-cheese mixture with the rest of the curd-banana mass.

    Add grated chocolate and whipped cream.

    If the mass is liquid, put it in the refrigerator. When the mass begins to thicken, lay it on the bananas.

    The biscuit we chose, we rub it in crumb and lay it on top of the filling. We're a little tight. You can sprinkle cocoa on top.
