Step by step

Method

    I haven't liked barley since I was a kid. I didn’t like it until I made this soup. All the ingredients go well together. It is moderately savage, moderately sharp. We really liked it.

    Pearl cereal the day before to go through, wash and soak for the night.

    The original recipe uses harissa to make soup, but if you don’t have it, crush crush crushed garlic and chili peppers in a mortar.

    Grind the onions and rub the carrots. Heat olive oil in a pan and roast it in the onion and carrots until golden.

    Cut the meat and add to the onions with carrots. Fry it a little.

    Then add barley and broth. Cook until the grains are soft.

    Meanwhile, grind the tomato.

    Add it to the finished soup and squeeze the juice of half a lemon. Cook on low heat for another 5 minutes.
