Method

  1. 01

The sauerkraut is one of our family’s favorite soups. We usually make this soup in the classic recipe, on a broth of beef on bone, but today I did not have beef, so I had to use turkey wings.

  2. 02

Wings wash. Pour 2-3 liters of water into a pan, put a turkey in it and put it on fire. Wait until the water boils, remove the foam, reduce the fire, cover and leave to cook for 30-40 minutes.

  3. 03

Slice the onions finely and rub the carrots on a medium grater.

  4. 04

In the pan, warm up olive (or vegetable) oil and roast the carrot with onions, stirring, for about 5 minutes.

  5. 05

Add sauerkraut to the roast. How to mix, cover with a lid and leave to extinguish on a small fire for 10 minutes, periodically stirring.

  6. 06

Meanwhile, we got a brewy broth and 2 boiled wings. We will take only meat from the wings, and throw out the rest. It is also necessary to peel and cut pieces of medium size 2-3 potatoes.

  7. 07

Put a pot of broth on fire. Put potatoes and turkey meat in it. Bring it to a boil.

  8. 08

Put in a pan with broth: roasting, 2 bay leaves, black pepper with peas. Stir and cook on a small heat under the cover for about 10 minutes. At the end, try the souvenir and add salt to taste.

  9. 09

Serve shiva made of sauerkraut, you can with finely chopped greens and sour cream, as well as black bread.
