    Salads with squid are very popular and are distinguished by a great variety in their composition. Despite the simple composition, a salad of squid with cheese is distinguished by a special sophistication.

    When starting to cook squid, you need to know how to boil them so that they turn out soft and retain their size. I cook in this way: bring the water to a boil, salt, pepper, throw peeled squid, bring it to a boil again and count to 10, then with the help of noise pull the squid out of the pan. Then I bring the water to a boil again and throw the next squid, count down to 10 again and pull it out immediately, etc. Squid is always soft and retains its large size, which is important. This method of cooking squid I borrowed from the famous St. Petersburg chef Oksana Putan.
